An airy temptation: coconut macaroons

Airy, light and yet crispy - this special texture is probably why we all love to eat the coconut macaroon. Add to this its delicate flavour - ideal as a delicate balance between sweet Christmas treats. It is almost impossible to imagine that it was originally created because of a shortage. 

But in fact it was the lack of almonds and a surplus of coconuts that inspired this pastry. Originally, the macaroon came from the Arabian region, where it was baked with almonds, sugar and rose water. Unfortunately, these ingredients did not exist in America around 1830. But the bakers knew how to help themselves and so the coconut macaroon was born! 

An exciting contrast: Stuffed lace

It is this interplay of intensely spicy and sweet enamel that probably makes the stuffed tips so popular. On the one hand, this results from the spices used in the dough of the classic gingerbread, such as cinnamon, nutmeg or cardamom. By storing them for weeks, sometimes even months, they intensify their flavour enormously. 

Now the gingerbread is filled with sweet jam (we use cherry or strawberry) and then coated with crunchy chocolate. This gives the spiciness an interesting counterpart. And we get one of the most delicious Christmas biscuits ever.

Simply a classic: biscuits

Perhaps it was the monks who, after the birth of Jesus, made elaborate and expensive baked goods and distributed them among the poor. Or maybe it was the Celts who offered small baked cakes in animal form to the spirits at the winter solstice. Whoever started baking biscuits for Christmas - we are still grateful to him or her today! Because there is hardly anything in Advent that we enjoy as much as cutting out the little biscuits, decorating them and then, of course, eating them.
